Caraway Carum carvi Hardy biennial. Likes a sunny spot with well drained soil. Feathery leaves with umbells of white flowers later becoming seed. Seeds used in bakery, leaves can be chopped into salads.
Catmint Nepeta faassenii (syn. Mussinii) Perennial reaching 12 to 18 inches. Attractive felty textured blue/grey leaves. Spikes of blue flowers all summer. Thrives in a well drained sunny position. Very attractive to cats and bees.
Catnep Nepeta cataria Perennial reaching 3ft. Leaves resemble those of a nettle but are soft and downy. This is the plant most favoured by cats. Said to repel rats. Used to brew a relaxing tea.
Catnep Lemon Nepeta cataria citriodora Slightly greener and smaller in appearance than the above with the addition of a lemon scent. White flowers are attractive to bees.

Chamomile Roman Anthemis nobilis Evergreen perennial reaching 12 inches. White daisy like flowers summer and autumn. Sweet scented feathery green foliage. This is the variety used for tea making. Likes some sun will tolerate most soils.

Chervil Plain Leaved Anthriscus cerefolium Similar to curly chervil except this variety has long straight leaves. Just as good in cookery but less attractive.
Chicory Cichorium intybus Hardy perennial with blue flowers. Leaves can be used in salads and roots can be roasted to make a coffee substitute. Much mentioned in herbal folklore.
Chives Allium schoenoprasum Hardy perennial reaching 15 inches. Mauve/Purple pom pom edible flowers and narrow cylindrical grass like leaves. Likes a moist garden soil with some sun but will tolerate partial shade. Chop leaves and use in soups salads etc, onion flavour.
Chives Garlic Allium tuberosum Hardy perennial reaching 18 inches. White flowers in late summer. Long narrow flat green leaves with a very mild garlic flavour. Prefers a rich moist garden soil in a sunny position. Leaves can be blanched by covering the plant with a suitable container. Flowers are good in salads and soup.
Comfrey symphytum officinale Herbaceous perennial reaching 3 to 4 ft. Pink white or purple bell like flowers with large dark green hairy leaves. Likes most damp soils with some shade. Use roots and leaves in a poultice for broken bones, bruises and rheumatism. Soak leaves in water to make your own fertiliser.
Comfrey Dwarf symphytum grandiflorum Nice dark green leaves with creamy yellow flowers in late spring. Grows to 1 ft so makes a good ground cover plant for damp shaded areas.
Coriander Coriandrum sativum Hardy annual reaching 3ft when run to seed. Young leaves are rounded and bright green with a very unique flavour and smell. As the plant matures the leaves become finely cut and feathery. Likes a sunny spot with a rich but light soil. Widely used in Asian and Middle Eastern cooking, made popular in the UK by Delia et al. Seeds and leaves both edible.
Coriander vietnamese Persicaria odorata This tropical perennial grows to 90 cm and has highly aromatic green leaves with a distictive dark green vee. Used sparingly in stir frys and with pork and pineapple. Prefers sun and moist soil
Cowslip Primula veris Hardy herbaceous perennial. Sturdy stems support upto 30 flowers. The flowers are made up of golden petals. Likes an open sandy but moist soil in light shade.
Cumin Cuminum cyminum Tender annual. Thread like green foliage with white/pink flowers. Must have a warm sunny site with well drained soil. Seeds and leaves add flavour to Middle Eastern dishes.
Curry Helichrysum angustifolium Half hardy evergreen sub-shrub reaching 18 inches. Tiny clusters of yellow flowers. Narrow needle like silver leaves with a sweey curry scent. Evening primrose Oenothera erythosepala Biennial reaching 3 ft. Fragrant yellow flowers up to 3 inches in diameter. Any soil in a sunny position. All parts of the plant are edible, young leaves and flowers are good in salads. The oil derived from the seed has many beneficial uses.

Very good lemon scent used in perfume oils and to flavour cakes. Must have a very sheltered position to survive a winter. Very late in coming out of dormancy.
Lemon Grass Cymbopogon citratus Tender perennial from the tropics. Reaches 6ft in the right climate, long thin grass blades with a large mid-rib. Good lemon scent and flavour. Needs full sun and a light soil. Minimum temperature of 13 degrees C needed.
Liquorice Glycyrrhiza glabra Hardy perennial needing deep rich moist soil and sun. Used as a flavouring and laxative. Also used in brewing (Guinness).Dislikes being grown in pots.

Parsley Flat Leaved Petroselenum crispum neapolitanum Sometimes called French or Italian parsley. This hardy biennial plant has superior flavour to curled parsley. The leaves as the name suggests are flat making it easily distinguishable. Will reach 12 to 14 inches in height.
Pennyroyal Mentha pulegium This hardy perennial has two forms, one is a creeper reaching not more than 6 inches while the upright form can reach 14 inches. Small green leaves on thick green stems. Strong mint scent. Moist soil preferred but will grow almost anywhere.Strew leaves to deter ants and fleas. Use sparingly in soups.
Purslane Golden Portulaca oleracea Annual growing to a height of 6 inches. Golden rounded fleshy leaves with pinky stems. Sunny site with well drained soil, watered frequently. Leaves are eaten raw in salads. Can be cooked and served with butter. Green form is available but is much less decorative.
Rocket Salad Eruca vesicaria sativa Fast growing annual. Lance shaped leaves with creamy white flowers with purple veins. Any soil in some sun. Eat the young leaves for their spicy flavour, add flowers to salads.
Rocket wild Diplotaxis tenuifolia Perennial. Smaller than salad rocket with a strong fiery flavour also slower to run up to seed.
Rosemary Rosmarinus officinalis var.
A range of hardy evergreen shrubs. Long narrow needle like foliage that is tough and resinous. Flowers appearing from April onwards and are borne in clusters. Prefers to be grown on a light sandy soil with a high pH. Will benefit from a sheltered position. Adds flavour to meat dishes especially lamb. Is said to stimulate circulation and strengthen the memory.
Barbecue The strongest growing rosemary. Large thick shiny light green leaves on upright woody stems. Upright habit. Used for making barbecue skewers. Excellent plant.
Benenden Blue Erect habit with quite fine leaves. Bright blue flowers, reaches up to 5 ft.
Blue Lagoon Fine leaved with arching habit. Deep blue flowers. The best dark blue rosemary we know of.
Haifa (trailing) Best trailing variety. Masses of mid blue flowers in summer. Excellent for pots and hanging baskets.

Sorrel Broad Leaved Rumex acetosa Hardy perennial slightly resembling a dock. Lance shaped leaves with a central fleshy vein. Likes a rich moist acidic soil. Sharp tangy flavour similar to apple peel. Use in salads and soup. Leaves are high in vitamins and minerals.

St Johns wort Hypericum perforatum Hardy evergreen perennial with small ovate green leaves that have small perforations visible only when held up to the light. Bright yellow flowers in summer. Used to treat insomnia.
Sweet Cicely Myrrhis odorata Herbaceous perennial. Fragrant fern like leaves with a bluish hue and a downy underside. Likes light shade and a rich moist soil. Use as a sweetener when cooking fruit. Aids digestion.
Tansy Tanacetum vulgare Hardy herbaceous perennial. Clusters of tight yellow mustard flowersin late summer. Leaves are feathery and fern like with a strong aroma. Was used as a flavouring in sausages and pies. Add to composts to increase potassium.
Tarragon French Artemesia dracunculus Perennial but only hardy to about 2 degrees of frost. Long narrow grey green leaves smelling of aniseed when crushed.Likes a sunny site with a light well drained soil. Will need protection in the winter. This is the best culinary Tarragon by far and has many culinary uses.
Tarragon Russian Artemesia dracunculoides Perennial plant much tougher than French. Bitter flavour lacking in aniseed, improves with age. Reaches 3 ft not as fussy about site and soil.
Thyme Thymus spp. Thymes come in all shapes, sizes and colours.The flowers are often sweetly scented and attractive to bees. Thymes are evergreen and many but not all are quite hardy.They range in heights from 1 inch up to 18 inches. They like warm sunny sheltered sites with well drained soil that is slightly alkaline. Used in many dishes and thought to help slow down the ageing process.
